Disc vs V-brake set-up?

I just bought a used aluminum GT MTB frameset with both v-brake studs and disc mount brackets. I need to buy wheels, brakes, levers, and cables to make it functional as a singlespeed urban bike. What would you do? I want to bomb around fast in all weather. Cost is not a major concern, but I don’t want to be stupid about it either.
Hee hee. Should have added I am a 45 year old geezer trying to rid himself of beer gut. Stair drops are a 25 year old memory (or not? Hmm). Thanks for the suggestions, however. physics 101 hints that actually do need improved braking capacity, now that i think of it…

As time passes, V-brakes are becoming more and more reliable in most conditions. They’re a cheaper alternative to Disc brakes but still not AS reliable. Personally, I would run a disc brake set up. They WILL stop you no matter what situation you’re in, whether it be snow, rain, fast speed to stop near a car, etc. Disc you can always trust. Check out companies like Avid or Shimano for a quality company. For your riding, I would recommend 160mm rotors because that’s all you’ll really need.
